Don't cook a filet mignon sous vide. Even if you are strongly motivated to get it right and not screw up, this delicious meat will be just fine seared on a pan. I prepared it sous vide here, and as a result ended up with amazingly soft, but somewhat dry meat, because most of the juice leaked out during the hours in the sous vide.
